Vegetables:
Collard Greens
Hate Collard Greens?  Then try this recipe!

Ingredients:

1 pack (bunch) collard greens
½ onion
3 cloves garlic
1/8 tsp whole anise seeds
1Tbsp parsley
½ tsp dried oregano
½ tsp Italian seasoning
½ tsp basil
1 leaf or two of sage (optional)



Fry half onion in olive oil.  Add crushed garlic and fry in oil.  When garlic is sizzling add anise seeds.  Do not let
garlic brown.  Add parsley and fry for a few seconds.  Add collard greens cut into large squares.

Fry until collard greens are bright green and wilted.  Add 1 cup water.  Bring to boil and simmer for 45 minutes to 1
hr. until tender.

Finally add a sprinkle of dried oregano, Italian seasoning, and basil.  Mix well.  Optional:  add sage.
