Mother Yust's Unforgettable
'Forgotten Torte'
Meringue:
One dozen egg whites at room temperature
½ c sugar
1 tsp vanilla
Topping:
1 pint of whipping cream
2 lbs of fruit
Directions:
Preheat oven to 450 to 500 F. Have ready. Grease
bundt cake pan. Use electric beater to beat up egg
whites. Gradually add sugar and vanilla. Continue
beating until until it is light and foamy and forming
stiff peaks. Then with a spatula, put into the
greased buttered bundt cake pan. Stick in
preheated oven and turn the oven off. Leave in
oven for about an hour.
In the mean time, whip up cream. Add powdered
sugar (about ¼ cup) to taste and 1 Tbsp vanilla.
You can top the torte with whatever sugared fruit
you like. Strawberries and raspberries preferred. If
fresh berries, soak in sugar water syrup (with
granulated sugar and/or corn syrup).
When meringue is cooled off, loosen edges with
knife and flip over onto cake platter. Cover with the
whipped cream. Add sweetened berries on top.
