Italian Omelette
Ingredients:
1 or 2 eggs
1/2 tsp oregano or basil
1/4 tsp Italian herb seasoning (if available)
Sprinkle of paprika
Pinch of salt
Light olive oil for frying
Optional: One large tomato (if available)
Directions:
Beat eggs in a bowl. Add dry ingredients Heat and oil steel pan. Once hot, pour egg into pan. Spread over pan
and allow to cook on one side. Fold into omelette shape and let it cook quickly on a medium flame. Do not cook
on low or the egg may become leathery.
Optional: Before you start cooking the omelette, fry sliced tomatoes in olive oil on a high flame. When finished
with omelette, add fried tomatoes on top of omelette on the plate. Grind fresh black pepper on top.
