Breakfast
Mexican Omelette

Ingredients:
1 or 2 eggs
1/4 tsp ground cumin
Sprinkle of paprika
Pinch of salt
Light olive oil for frying
2 Tbsp salsa (Pace picante preferred)
1/2 banana pepper and/or halapeno pepper
3 slices cheddar cheese (or enough to cover omelette)


Directions:  

Beat eggs in a bowl.  Add ground cumin, paprika, and salt.   Heat and oil steel pan.  Once hot, pour egg into pan.
Spread over pan and allow to cook on one side.  Add cheese alongside the center of the omelette in a strip.  Add
peppers.  Lastly add salsa.  Fold omelette over inside ingredients.  Turn flame to low and wait for cheese to melt.  
Serve with toast.
