Vegetables:
Peas with Tomato Sauce
Delicious Peas with Tomato Sauce

Ingredients:
3-4 spring onions (or can use ½ medium onion)
1 clove garlic
½ tsp ground cumin
½ cup tomato sauce (Hunt's tomato puree) or two chopped tomatoes

Chop spring onions or onions.  Fry in olive oil.  Add 1 clove mashed garlic.  Add ½ tsp cumin (fry
in small pool of oil in center of pan and mix with onions).

Add frozen peas and fry for a few minutes on a moderate to high flame.  Add tomatoes or tomato
sauce.  Fry a few minutes more until peas are tender.  

Serve with bread or pasta.

Lunch:
Yellow Lentil Soup
Yellow Lentil Soup (Dal Masoor)

Ingredients:
1 cup lentils
4 cloves of garlic
1 medium sized onion (chopped)
1 Tbsp paprika
3-4 dried red chili peppers
3 cups water
2 Tbsp oil
Salt to taste

Directions:

Wash lentils until the water is clear.  Add 3 cups
of water to lentils in pan.  Bring to boil and
remove starch from the surface.  Add red chili
peppers.  Turn the flame down to simmer.  After
about 30 minutes, add the onion and paprika.  
Stir and continue simmering for about a half
hour.  

Mash garlic and fry in small pan with olive oil until
blisters.  Do not let it go brown.  Pour garlic into
soup.  Let simmer for another 15 minutes until
lentils are tender.

Note: Stir frequently when simmering (every 10
minutes) to avoid sticking.  Also, if more water is
necessary, add to desired thickness.  Serve with
bread.
